The viscosity of industrial starch paste changes less than that of other starches, so it is often used as a sizing agent, adhesive and thickener for various foods. When starch is boiled and cooled, if the concentration exceeds 3.5%, it will form a soft gel, and if the concentration reaches about 6%, it will become a gel with a very high elastic coefficient.
